Smoked Turkey Vegetable Wraps with Asian Sesame Dressing and Spicy Tortillas

Yesterday I was looking for something that would be easy to make and that I could still feel good about eating. At the same time though, I wanted something that was really flavorful but still on the nutritious side of things. And then I happened to find a tasty looking vegetable wrap recipe with smoked turkey. That sounded great since I had tried some vegetable wraps before that turned out to be better than I imagined. But this time, I figured I wanted to add something to these to get some more flavor out of each bite.

The original recipe I found seemed really delicious from the beginning since I like smokey flavors but I wanted to bring up the level of flavors just a little bit. So I started with a simple substitution of Asian sesame dressing instead of the Italian dressing I had used before. This mixture with ginger and soy sauce was added to the vegetable mix and definitely helped make for a great combination of flavors.

Then I decided after making a few of these wraps to change the recipe a little more. A simple change made a huge difference. By flavoring the tortillas with a mixture of spices and olive oil with butter, I was able to get a little more variety while using much of the same ingredients. The extra chili powder and pepper on the tortillas in these wraps gives the wraps a really good level of spiciness.

The extra seasoning definitely helps with devouring lots of good vegetables along the way. Since some of the vegetables in these wraps are said to help with all sorts of things from preventing some cancers, helping you have healthier skin health and even night vision, any new way to eat more is a great idea. Also, aside from being something fast, convenient and delicious to eat for a light meal or snack, you can even make these wraps the night before and take them to work, school, or wherever you are going.

-The Recipe-

This recipe was adapted from the version without asian sesame dressing at Taste Of Home.com.

Time: 10 min.

Serves: 2

Ingredients:

1/2 medium cucumber, peeled, seeded and cut into 1/4 in. strips
1/2 medium carrot, cut into 1/4 in. strips
1/2 medium green bell pepper, cut into 1/4 in. strips
1/4 cup of Asian sesame dressing
1/4 cup of reduced fat vegetable cream cheese
2 flour tortillas (8 inches) room temperature (heated in spice mixture of: 1 tbsp. of olive oil and 1/2 tbsp. of butter, and a dash of garlic, chili powder and fresh cracked black pepper)
1/4 lb. of thinly sliced deli smoked turkey

Directions:

1. In a resealable plastic bag, combine the strips of cucumber, carrot, green bell pepper, and sesame dressing. Seal the bag and shake it up until all the vegetables are evenly coated.

2. Spread the vegetable cream cheese over the tortillas and top with the strips of the thinly sliced deli meat.

3. Drain the vegetables of the dressing and add only the vegetables to your wraps.

4. Next, simply roll them up and enjoy your wraps.

You can also warm them up in the microwave before you have some.
